Grapes: Sangiovese 95%, Mammolo 5%
Microclimate: Favorable conditions with excellent day-night temperature variations during the stages of final ripening. Absence of fog and humidity, ventilated position.
Vinification and Aging: vinified in small stainless steel vats with manual punching down. Fermentation temperature 28-30 ° C, with a duration of maceration of 12-15 days, with a floating cap. Malolactic fermentation carried out spontaneously.
